Description
Thinking of our traditional summer Sundays, the first thing that’s comes to mind is the aroma of fresh mint that envelopes the house. Our Nonna, when it was close to lunchtime, used to go out and pick the mint and bring it back to the kitchen, mint is a classic ingredient in Classic Neapolitan cooking, which is why my Nonna loved it so. You need it for classics such as “Zucchine alla scapece” and “alici in tortiera”, dishes that are generously seasoned with oil and mint.
To have this precious herb available all year round, it was Nonna initially who asked Nonno if our extra virgin olive oil could be infused with mint. This is how our Mint infused olive oil came to be. This lends a lovely freshness to fish dishes, as well as grilled vegetables, eggs, all types of meat, especially lamb.
